Description

Soft and chewy banana oatmeal bars made with ripe bananas and wholesome oats, perfect for a healthy snack or quick breakfast.


Ingredients

  • 2 ripe bananas, mashed
  • 2 cups rolled oats
  • 1/4 cup honey or maple syrup
  • 1/4 cup milk or plant-based milk
  • 1/4 cup melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup chopped nuts or chocolate chips (optional)


Instructions

  1. Preheat the oven to 180°C (350°F) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, mash the bananas until smooth.
  3. Add honey or maple syrup, milk, melted butter, and vanilla extract to the bananas and mix well.
  4. Stir in oats, cinnamon, baking powder, and salt until fully combined.
  5. Fold in nuts or chocolate chips if using.
  6. Spread the mixture evenly into the prepared pan.
  7. Bake for 20–25 minutes, or until the top is set and lightly golden.
  8. Allow to cool completely before slicing into bars.

Notes

  • Use very ripe bananas for natural sweetness.
  • These bars can be stored in an airtight container for up to 4 days.
  • They can also be frozen for longer storage.
