Blackberry Mousse Cakes are elegant layered desserts featuring a light vanilla sponge base topped with a silky smooth blackberry mousse. Fresh, fruity, and beautifully vibrant, these individual cakes are perfect for special occasions.
Ingredients
- 1 cup fresh blackberries (plus extra for garnish)
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon unflavored gelatin
- 2 tablespoons cold water
- 1 cup heavy whipping cream
- 1/2 teaspoon vanilla extract
- 1 prepared vanilla sponge cake layer (cut into rounds)
- 1/4 cup powdered sugar
Instructions
- Puree blackberries with granulated sugar and lemon juice until smooth. Strain to remove seeds.
- Sprinkle gelatin over cold water and let bloom for 5 minutes.
- Warm a small portion of blackberry puree and stir in bloomed gelatin until dissolved. Mix back into remaining puree and cool slightly.
- Whip heavy cream with powdered sugar and vanilla until soft peaks form.
- Gently fold blackberry mixture into whipped cream until fully combined.
- Place sponge cake rounds into individual ring molds or serving glasses.
- Spoon blackberry mousse over sponge and smooth tops.
- Refrigerate for at least 3 hours until set.
- Garnish with fresh blackberries before serving.
Notes
- Ensure gelatin is fully dissolved to avoid lumps.
- Can be made a day in advance.
- Use silicone molds for easy removal.
