Description

Blackberry Mousse Cakes are elegant layered desserts featuring a light vanilla sponge base topped with a silky smooth blackberry mousse. Fresh, fruity, and beautifully vibrant, these individual cakes are perfect for special occasions.


Ingredients

  • 1 cup fresh blackberries (plus extra for garnish)
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon unflavored gelatin
  • 2 tablespoons cold water
  • 1 cup heavy whipping cream
  • 1/2 teaspoon vanilla extract
  • 1 prepared vanilla sponge cake layer (cut into rounds)
  • 1/4 cup powdered sugar


Instructions

  1. Puree blackberries with granulated sugar and lemon juice until smooth. Strain to remove seeds.
  2. Sprinkle gelatin over cold water and let bloom for 5 minutes.
  3. Warm a small portion of blackberry puree and stir in bloomed gelatin until dissolved. Mix back into remaining puree and cool slightly.
  4. Whip heavy cream with powdered sugar and vanilla until soft peaks form.
  5. Gently fold blackberry mixture into whipped cream until fully combined.
  6. Place sponge cake rounds into individual ring molds or serving glasses.
  7. Spoon blackberry mousse over sponge and smooth tops.
  8. Refrigerate for at least 3 hours until set.
  9. Garnish with fresh blackberries before serving.

  • Ensure gelatin is fully dissolved to avoid lumps.
  • Can be made a day in advance.
