Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 (10.5 oz) can cream of mushroom soup
- 1/2 cup milk
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1 box (11.36 oz) cheddar bay biscuit mix
- 2/3 cup milk (for biscuit mix)
- 1/2 cup shredded cheddar cheese (optional for extra cheesiness)
- 2 tablespoons butter, melted
- 1/2 teaspoon garlic powder
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large skillet over medium heat, cook ground beef and diced onion until beef is browned. Drain excess fat.
- Add garlic and cook for 30 seconds until fragrant.
- Stir in mixed vegetables, cream of mushroom soup, 1/2 cup milk, Worcestershire sauce, salt, pepper, and thyme. Simmer for 3–4 minutes.
- Transfer beef mixture evenly into the prepared baking dish.
- In a bowl, prepare cheddar bay biscuit mix according to package instructions using 2/3 cup milk. Stir in shredded cheddar if using.
- Spoon biscuit batter evenly over the beef mixture.
- Bake for 25–30 minutes until biscuits are golden brown and cooked through.
- Mix melted butter with garlic powder and parsley. Brush over warm biscuits before serving.
