Ingredients
- 2 lbs potatoes, diced
- 2 tablespoons olive oil
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream
- 2 green onions, sliced
Instructions
- Preheat oven to 400°F (200°C) and grease a baking dish.
- Toss diced potatoes with olive oil and taco seasoning until well coated.
- Spread potatoes evenly in the baking dish.
- Bake uncovered for 35–40 minutes, stirring halfway, until potatoes are tender and golden.
- Remove from oven and sprinkle cheddar and Monterey Jack cheese evenly over the potatoes.
- Return to oven for 5–7 minutes until cheese is fully melted.
- Top with sour cream and green onions before serving.
Notes
- Add cooked ground beef or chicken for a complete meal.
- Serve with salsa or guacamole for extra flavor.
