Description

A bold and comforting dish featuring tender roasted potatoes tossed with taco seasoning and smothered in melted cheese—perfect as a side or hearty main.


Ingredients

  • 2 lbs potatoes, diced
  • 2 tablespoons olive oil
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 2 green onions, sliced


Instructions

  1. Preheat oven to 400°F (200°C) and grease a baking dish.
  2. Toss diced potatoes with olive oil and taco seasoning until well coated.
  3. Spread potatoes evenly in the baking dish.
  4. Bake uncovered for 35–40 minutes, stirring halfway, until potatoes are tender and golden.
  5. Remove from oven and sprinkle cheddar and Monterey Jack cheese evenly over the potatoes.
  6. Return to oven for 5–7 minutes until cheese is fully melted.
  7. Top with sour cream and green onions before serving.
