Ingredients

  • 1 pound ground beef or ground chicken
  • 1 tablespoon olive oil
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • 1/2 cup water
  • 2 cups cooked white or brown rice
  • 1 cup shredded cheddar cheese
  • 1/2 cup black beans (drained and rinsed)
  • 1/2 cup corn kernels
  • 1/2 cup diced tomatoes
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • 1/4 cup chopped lettuce
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add ground beef or chicken and cook until browned, breaking it apart as it cooks.
  3. Drain excess fat if needed.
  4. Stir in taco seasoning and water, simmer for 3–5 minutes until thickened.
  5. Warm cooked rice and divide into serving bowls.
  6. Top rice with seasoned meat, black beans, corn, and diced tomatoes.
  7. Sprinkle shredded cheese over the hot mixture so it melts.
  8. Add sour cream, salsa, and lettuce on top.
  9. Garnish with fresh cilantro if desired.
  10. Serve immediately.
