Ingredients
- 1 pound ground beef or ground chicken
- 1 tablespoon olive oil
- 1 packet taco seasoning (or 2 tablespoons homemade)
- 1/2 cup water
- 2 cups cooked white or brown rice
- 1 cup shredded cheddar cheese
- 1/2 cup black beans (drained and rinsed)
- 1/2 cup corn kernels
- 1/2 cup diced tomatoes
- 1/4 cup sour cream
- 1/4 cup salsa
- 1/4 cup chopped lettuce
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Heat olive oil in a skillet over medium heat.
- Add ground beef or chicken and cook until browned, breaking it apart as it cooks.
- Drain excess fat if needed.
- Stir in taco seasoning and water, simmer for 3–5 minutes until thickened.
- Warm cooked rice and divide into serving bowls.
- Top rice with seasoned meat, black beans, corn, and diced tomatoes.
- Sprinkle shredded cheese over the hot mixture so it melts.
- Add sour cream, salsa, and lettuce on top.
- Garnish with fresh cilantro if desired.
- Serve immediately.
