Description

Chicken Bell Pepper Ranch Burritos are a flavorful and satisfying meal with tender chicken, sautéed bell peppers, and a creamy ranch dressing, all wrapped up in a soft tortilla for a delicious bite.


Ingredients

  • 1 pound boneless, skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1/2 onion, sliced
  • 2 cloves garlic, minced
  • 1 packet ranch seasoning mix
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro, chopped (optional)
  • 4 large flour tortillas
  • Salt and pepper to taste


Instructions

  1. In a large skillet, heat olive oil over medium heat. Add diced chicken, season with salt and pepper, and cook until browned and cooked through, about 6-8 minutes. Remove chicken from the skillet and set aside.
  2. In the same skillet, add the sliced bell peppers, onion, and garlic. Cook for about 5 minutes, until the vegetables are tender.
  3. Return the cooked chicken to the skillet with the vegetables. Add the ranch seasoning mix and stir to coat the chicken and peppers evenly. Cook for another 2 minutes.
  4. Remove the skillet from heat and stir in the sour cream until the mixture is creamy and well combined.
  5. Warm the tortillas in the microwave or on a skillet for a few seconds until soft and pliable.
  6. To assemble, place a generous amount of the chicken and vegetable mixture in the center of each tortilla. Top with shredded cheddar cheese and fresh cilantro if desired.
  7. Roll the tortillas into burritos, folding in the edges as you go. Serve warm and enjoy!
