Chicken Bell Pepper Ranch Burritos are a flavorful and satisfying meal with tender chicken, sautéed bell peppers, and a creamy ranch dressing, all wrapped up in a soft tortilla for a delicious bite.
Ingredients
- 1 pound boneless, skinless chicken breasts, diced
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1/2 onion, sliced
- 2 cloves garlic, minced
- 1 packet ranch seasoning mix
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
- 1/4 cup fresh cilantro, chopped (optional)
- 4 large flour tortillas
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat. Add diced chicken, season with salt and pepper, and cook until browned and cooked through, about 6-8 minutes. Remove chicken from the skillet and set aside.
- In the same skillet, add the sliced bell peppers, onion, and garlic. Cook for about 5 minutes, until the vegetables are tender.
- Return the cooked chicken to the skillet with the vegetables. Add the ranch seasoning mix and stir to coat the chicken and peppers evenly. Cook for another 2 minutes.
- Remove the skillet from heat and stir in the sour cream until the mixture is creamy and well combined.
- Warm the tortillas in the microwave or on a skillet for a few seconds until soft and pliable.
- To assemble, place a generous amount of the chicken and vegetable mixture in the center of each tortilla. Top with shredded cheddar cheese and fresh cilantro if desired.
- Roll the tortillas into burritos, folding in the edges as you go. Serve warm and enjoy!
