Ingredients
- 4 chicken thighs or breasts
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 cup chopped tomatoes (fresh or canned)
- 1/2 cup chicken broth
- 1 teaspoon tomato paste
- 1 teaspoon thyme
- 1 teaspoon parsley
- Salt and black pepper to taste
Instructions
- Season chicken with salt and pepper.
- Heat olive oil and butter in a large pan over medium heat.
- Sear chicken on both sides until golden brown, then remove and set aside.
- In the same pan, sauté onions, garlic, and mushrooms until softened.
- Add tomato paste and stir for 1 minute.
- Pour in chopped tomatoes and chicken broth, mixing well.
- Add thyme and parsley, then return chicken to the pan.
- Cover and simmer for 25–30 minutes until chicken is cooked through and sauce thickens.
- Taste and adjust seasoning if needed.
- Serve hot with rice, potatoes, or crusty bread.

- Use halal chicken if required.
- You can add a splash of vinegar or lemon juice for brightness.
- Boneless chicken cooks faster than bone-in.
- Fresh herbs enhance flavor but dried can be used.
