Description

Juicy chicken satay skewers marinated in aromatic spices and grilled to perfection, served with an easy, creamy Thai-style peanut sauce.


Ingredients

  • 1 lb boneless, skinless chicken breast, cut into strips
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp brown sugar or coconut sugar
  • 2 cloves garlic, minced
  • 1 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1/2 tsp turmeric
  • 2 tbsp vegetable oil
  • Wooden skewers, soaked in water
  • 1/2 cup peanut butter
  • 1/4 cup coconut milk
  • 1 tbsp soy sauce (for sauce)
  • 1 tbsp lime juice (for sauce)
  • 1 tsp sugar (for sauce)
  • 1/2 tsp red curry paste (optional)
  • Water as needed to thin sauce


Instructions

  1. In a bowl, mix soy sauce, lime juice, brown sugar, garlic, coriander, cumin, turmeric, and oil.
  2. Add chicken strips and toss to coat; marinate for at least 30 minutes.
  3. Thread marinated chicken onto soaked skewers.
  4. Heat a grill pan or grill over medium-high heat.
  5. Grill chicken skewers for 3–4 minutes per side until cooked through and lightly charred.
  6. Meanwhile, in a saucepan over low heat, combine peanut butter, coconut milk, soy sauce, lime juice, sugar, and curry paste.
  7. Stir until smooth, adding water to reach desired consistency.
  8. Remove sauce from heat.
  9. Serve chicken satay warm with peanut sauce on the side.

Notes

  • Do not overcook chicken to keep it juicy.
  • Chicken thighs can be used for extra tenderness.
  • Serve with cucumber salad or jasmine rice.
