Description
Juicy chicken satay skewers marinated in aromatic spices and grilled to perfection, served with an easy, creamy Thai-style peanut sauce.
Ingredients
- 1 lb boneless, skinless chicken breast, cut into strips
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp brown sugar or coconut sugar
- 2 cloves garlic, minced
- 1 tsp ground coriander
- 1/2 tsp ground cumin
- 1/2 tsp turmeric
- 2 tbsp vegetable oil
- Wooden skewers, soaked in water
- 1/2 cup peanut butter
- 1/4 cup coconut milk
- 1 tbsp soy sauce (for sauce)
- 1 tbsp lime juice (for sauce)
- 1 tsp sugar (for sauce)
- 1/2 tsp red curry paste (optional)
- Water as needed to thin sauce
Instructions
- In a bowl, mix soy sauce, lime juice, brown sugar, garlic, coriander, cumin, turmeric, and oil.
- Add chicken strips and toss to coat; marinate for at least 30 minutes.
- Thread marinated chicken onto soaked skewers.
- Heat a grill pan or grill over medium-high heat.
- Grill chicken skewers for 3–4 minutes per side until cooked through and lightly charred.
- Meanwhile, in a saucepan over low heat, combine peanut butter, coconut milk, soy sauce, lime juice, sugar, and curry paste.
- Stir until smooth, adding water to reach desired consistency.
- Remove sauce from heat.
- Serve chicken satay warm with peanut sauce on the side.
Notes
- Do not overcook chicken to keep it juicy.
- Chicken thighs can be used for extra tenderness.
- Serve with cucumber salad or jasmine rice.
