Description
Rich, moist, and decadent chocolate cupcakes topped with a fluffy chocolate buttercream frosting. These cupcakes are perfect for any celebration or as an everyday indulgence.
Ingredients
- For the cupcakes:
- 1 3/4 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- For the chocolate buttercream frosting:
- 1 cup unsalted butter, softened
- 3 1/2 cups powdered sugar
- 1/2 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 2 teaspoons vanilla extract
- 1/4 cup heavy cream (more if needed)
- 1/4 cup whole milk (more if needed)
Instructions
- Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In a separate bowl, whisk together eggs, milk, oil, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until smooth.
- Gradually add the boiling water and mix until well combined. The batter will be thin, but that’s okay!
- Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
- Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and allow to cool in the pan for 5 minutes, then transfer cupcakes to a wire rack to cool completely.
- For the frosting: In a large bowl, beat the softened butter until creamy and smooth.
- Add powdered sugar, cocoa powder, and salt. Beat on low until combined, then increase the speed and beat until fluffy.
- Add vanilla extract and gradually add heavy cream and milk, one tablespoon at a time, until the frosting reaches your desired consistency.
- Frost the cooled cupcakes with the chocolate buttercream frosting using a piping bag or spatula. Decorate as desired!
Notes
- If you prefer a richer chocolate flavor, you can use dark cocoa powder.
- To make the cupcakes even more decadent, fill them with chocolate ganache or frosting in the center before baking.
- If the frosting is too thick, add more milk or heavy cream, one tablespoon at a time, until smooth.
