Description
Chocolate Strawberry Cheesecake Pancake Tacos are soft chocolate pancakes folded like tacos and filled with a creamy cheesecake mixture and fresh strawberries for a fun and indulgent dessert breakfast.
Ingredients
- 1 cup all-purpose flour
- 2 tbsp cocoa powder
- 2 tbsp granulated sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1 large egg
- 1 cup milk
- 1 tbsp melted butter or oil
- 1/2 tsp vanilla extract
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract (for filling)
- 1 cup fresh strawberries, diced
- 1/4 cup chocolate chips or chocolate drizzle (optional)
Instructions
- In a bowl, whisk flour, cocoa powder, sugar, baking powder, and salt.
- In another bowl, whisk egg, milk, melted butter, and vanilla extract.
- Combine wet and dry ingredients until smooth.
- Heat a lightly greased skillet over medium heat.
- Pour small circles of batter and cook 1–2 minutes per side until done.
- While still warm, gently fold pancakes in half and let cool slightly to hold shape.
- In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
- Spoon cheesecake filling into each pancake taco.
- Top with diced strawberries and drizzle with chocolate if desired.
- Serve immediately.
Notes
- Do not overcook pancakes to keep them flexible.
- Chill filling slightly for thicker texture.
