Description

A classic Italian seafood dish featuring fresh mussels simmered in a fragrant garlic and tomato sauce with olive oil and herbs, perfect served with crusty bread.


Ingredients

  • 2 lbs fresh mussels, cleaned and debearded
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 can (14 oz) crushed tomatoes
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup dry white wine (optional)
  • 2 tablespoons fresh parsley, chopped
  • Fresh basil leaves for garnish (optional)


Instructions

  1. Rinse mussels under cold water and discard any that are open and do not close when tapped.
  2. Heat olive oil in a large pot over medium heat.
  3. Add onion and sauté for 3–4 minutes until softened.
  4. Add garlic and red pepper flakes; cook for 30 seconds until fragrant.
  5. Pour in crushed tomatoes and white wine (if using); simmer for 8–10 minutes.
  6. Add mussels to the pot and cover with a lid.
  7. Cook for 5–7 minutes, shaking the pot occasionally, until mussels open.
  8. Discard any unopened mussels.
  9. Season with salt and black pepper, garnish with parsley and basil, and serve hot.

Notes

  • Serve with crusty bread or over pasta.
  • Do not overcook mussels to keep them tender.
  • You may substitute wine with vegetable broth.
