Description

Crispy golden breaded schnitzel served with a rich and savory mushroom gravy, a comforting and hearty classic dish.


Ingredients

  • 4 boneless pork or chicken cutlets
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon paprika
  • 1/2 cup vegetable oil (for frying)
  • 2 tablespoons butter
  • 8 oz mushrooms, sliced
  • 1 small onion, finely chopped
  • 2 tablespoons all-purpose flour (for gravy)
  • 1 1/2 cups beef or chicken broth
  • 1/4 cup heavy cream (optional)


Instructions

  1. Place cutlets between plastic wrap and pound until evenly thin.
  2. Season the cutlets with salt, pepper, and paprika.
  3. Dredge each cutlet in flour, dip in beaten eggs, then coat with breadcrumbs.
  4. Heat oil in a skillet over medium-high heat.
  5. Fry schnitzels for 3–4 minutes per side until golden and crispy. Remove and keep warm.
  6. In the same pan, melt butter and sauté onions until soft.
  7. Add mushrooms and cook until browned.
  8. Stir in flour and cook for 1 minute.
  9. Gradually add broth, stirring constantly until thickened.
  10. Stir in cream if using and season to taste.
  11. Serve mushroom gravy over the crispy schnitzel.

Notes

  • Serve with mashed potatoes or spaetzle for a traditional meal.
  • Lemon wedges add a bright contrast to the rich flavors.
  • Gravy can be made ahead and reheated gently.
