Description
Crispy golden breaded schnitzel served with a rich and savory mushroom gravy, a comforting and hearty classic dish.
Ingredients
- 4 boneless pork or chicken cutlets
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- Salt, to taste
- Black pepper, to taste
- 1 teaspoon paprika
- 1/2 cup vegetable oil (for frying)
- 2 tablespoons butter
- 8 oz mushrooms, sliced
- 1 small onion, finely chopped
- 2 tablespoons all-purpose flour (for gravy)
- 1 1/2 cups beef or chicken broth
- 1/4 cup heavy cream (optional)
Instructions
- Place cutlets between plastic wrap and pound until evenly thin.
- Season the cutlets with salt, pepper, and paprika.
- Dredge each cutlet in flour, dip in beaten eggs, then coat with breadcrumbs.
- Heat oil in a skillet over medium-high heat.
- Fry schnitzels for 3–4 minutes per side until golden and crispy. Remove and keep warm.
- In the same pan, melt butter and sauté onions until soft.
- Add mushrooms and cook until browned.
- Stir in flour and cook for 1 minute.
- Gradually add broth, stirring constantly until thickened.
- Stir in cream if using and season to taste.
- Serve mushroom gravy over the crispy schnitzel.
Notes
- Serve with mashed potatoes or spaetzle for a traditional meal.
- Lemon wedges add a bright contrast to the rich flavors.
- Gravy can be made ahead and reheated gently.
