Description
Crispy Potato Bites with Garlic Dip are golden, crunchy mini potatoes seasoned to perfection and served with a creamy, flavorful garlic dipping sauce. These easy party appetizers are crowd-pleasing and perfect for gatherings.
Ingredients
- 1 1/2 lbs baby potatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley (optional)
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- Pinch of salt (for dip)
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Place halved baby potatoes in a large pot of salted water. Bring to a boil and cook for 12–15 minutes until fork-tender. Drain well.
- Transfer potatoes to the baking sheet and gently press each one with the bottom of a glass to slightly flatten.
- Drizzle with olive oil and sprinkle with garlic powder, paprika, oregano, salt, and pepper.
- Bake for 20–25 minutes until crispy and golden brown.
- While potatoes bake, prepare the garlic dip by mixing sour cream, mayonnaise, minced garlic, lemon juice, and a pinch of salt until smooth.
- Sprinkle baked potatoes with fresh parsley.
- Serve warm with garlic dip on the side.
Notes
- For extra crispiness, broil for 2–3 minutes at the end.
- Add grated Parmesan before baking for a cheesy version.
- Use Greek yogurt instead of sour cream for a lighter dip.
- Best served fresh, but leftovers can be reheated in the oven.
