Description

Crispy Potato Bites with Garlic Dip are golden, crunchy mini potatoes seasoned to perfection and served with a creamy, flavorful garlic dipping sauce. These easy party appetizers are crowd-pleasing and perfect for gatherings.

Ingredients

  • 1 1/2 lbs baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (optional)
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Pinch of salt (for dip)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Place halved baby potatoes in a large pot of salted water. Bring to a boil and cook for 12–15 minutes until fork-tender. Drain well.
  3. Transfer potatoes to the baking sheet and gently press each one with the bottom of a glass to slightly flatten.
  4. Drizzle with olive oil and sprinkle with garlic powder, paprika, oregano, salt, and pepper.
  5. Bake for 20–25 minutes until crispy and golden brown.
  6. While potatoes bake, prepare the garlic dip by mixing sour cream, mayonnaise, minced garlic, lemon juice, and a pinch of salt until smooth.
  7. Sprinkle baked potatoes with fresh parsley.
  8. Serve warm with garlic dip on the side.

Notes

  • For extra crispiness, broil for 2–3 minutes at the end.
  • Add grated Parmesan before baking for a cheesy version.
  • Use Greek yogurt instead of sour cream for a lighter dip.
  • Best served fresh, but leftovers can be reheated in the oven.
