Description

Crispy oven-baked veggie fries tossed in a bold blend of lemon, garlic, and spices, delivering a zesty, spicy crunch that makes a perfect healthy snack or side dish.


Ingredients

  • 2 large carrots, cut into fries
  • 1 large zucchini, cut into fries
  • 1 large sweet potato, cut into fries
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons grated Parmesan cheese (optional)
  • Fresh parsley, chopped (optional)


Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Place carrot, zucchini, and sweet potato fries in a large bowl.
  3. Add olive oil, garlic, lemon zest, lemon juice, paprika, chili powder, cayenne pepper, salt, and black pepper.
  4. Toss well until vegetables are evenly coated.
  5. Spread fries in a single layer on the baking sheet, avoiding overcrowding.
  6. Bake for 20 minutes, flip fries, then bake another 15–20 minutes until crispy and golden.
  7. Remove from oven and sprinkle with Parmesan cheese and parsley if using.
  8. Serve hot with your favorite dipping sauce.

Notes

  • For extra crispiness, soak sweet potato fries in cold water for 30 minutes and dry well before baking.
  • Can be made in an air fryer at 400°F (205°C) for 15–18 minutes.
