Ingredients
- 2 large carrots, cut into fries
- 1 large zucchini, cut into fries
- 1 large sweet potato, cut into fries
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 teaspoon paprika
- 1/2 teaspoon chili powder
- 1/4 teaspoon cayenne pepper (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons grated Parmesan cheese (optional)
- Fresh parsley, chopped (optional)
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Place carrot, zucchini, and sweet potato fries in a large bowl.
- Add olive oil, garlic, lemon zest, lemon juice, paprika, chili powder, cayenne pepper, salt, and black pepper.
- Toss well until vegetables are evenly coated.
- Spread fries in a single layer on the baking sheet, avoiding overcrowding.
- Bake for 20 minutes, flip fries, then bake another 15–20 minutes until crispy and golden.
- Remove from oven and sprinkle with Parmesan cheese and parsley if using.
- Serve hot with your favorite dipping sauce.
Notes
- For extra crispiness, soak sweet potato fries in cold water for 30 minutes and dry well before baking.
- Can be made in an air fryer at 400°F (205°C) for 15–18 minutes.
