Ingredients
- 2 cups cooked chicken breast, diced
- 1 cup broccoli florets, chopped
- 1 cup bell peppers, diced
- 1/2 cup zucchini, sliced
- 1/2 cup onion, diced
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 4 large eggs
- 1/2 cup milk
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried Italian herbs
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 375°F (190°C) and grease a casserole dish.
- Heat olive oil in a skillet over medium heat and sauté garlic, onion, and vegetables for 4–5 minutes until slightly tender.
- Spread cooked chicken evenly in the casserole dish.
- Top with sautéed vegetables and sprinkle cheeses evenly over the mixture.
- In a bowl, whisk eggs, milk, Italian herbs, thyme, salt, and pepper.
- Pour egg mixture evenly over the casserole.
- Bake uncovered for 30–35 minutes until set and lightly golden on top.
- Let rest for 5 minutes before slicing and serving.

- Use rotisserie chicken for convenience.
