Description

A hearty and flavorful crustless casserole made with tender herb-seasoned chicken, fresh vegetables, and melted cheese, perfect for a low-carb, protein-rich meal.


Ingredients

  • 2 cups cooked chicken breast, diced
  • 1 cup broccoli florets, chopped
  • 1 cup bell peppers, diced
  • 1/2 cup zucchini, sliced
  • 1/2 cup onion, diced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 4 large eggs
  • 1/2 cup milk
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian herbs
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat oven to 375°F (190°C) and grease a casserole dish.
  2. Heat olive oil in a skillet over medium heat and sauté garlic, onion, and vegetables for 4–5 minutes until slightly tender.
  3. Spread cooked chicken evenly in the casserole dish.
  4. Top with sautéed vegetables and sprinkle cheeses evenly over the mixture.
  5. In a bowl, whisk eggs, milk, Italian herbs, thyme, salt, and pepper.
  6. Pour egg mixture evenly over the casserole.
  7. Bake uncovered for 30–35 minutes until set and lightly golden on top.
  8. Let rest for 5 minutes before slicing and serving.
