Description
A decadent no-bake dessert inspired by classic chocolate éclairs, made with layers of cookies, creamy vanilla filling, and a rich chocolate topping.
Ingredients
- 2 packages graham crackers or tea biscuits
- 2 cups cold milk
- 2 packages instant vanilla pudding mix
- 1 cup heavy cream
- 7 oz (200 g) dark chocolate
- 2 tbsp unsalted butter
- 1 tsp vanilla extract
Instructions
- In a bowl, whisk cold milk with the vanilla pudding mix until thick and smooth.
- Arrange a single layer of graham crackers in the bottom of a rectangular dish.
- Spread a generous layer of vanilla pudding over the crackers.
- Repeat layering crackers and pudding, finishing with a pudding layer on top.
- In a saucepan over low heat, melt dark chocolate with butter and heavy cream, stirring until smooth.
- Pour the chocolate topping evenly over the dessert and smooth the surface.
- Refrigerate for at least 6 hours, preferably overnight, before serving.
Notes
- Chilling allows the crackers to soften into a cake-like texture.
- This dessert tastes even better when made a day ahead.
- You can add a little espresso powder to the chocolate for deeper flavor.
