Description

A quick and easy English muffin breakfast pizza topped with eggs, cheese, and breakfast meats, perfect for busy mornings.


Ingredients

  • 4 English muffins, split in half
  • 4 large eggs
  • 1 cup shredded mozzarella or cheddar cheese
  • 1/2 cup cooked breakfast sausage or bacon, crumbled
  • 2 tbsp butter
  • Salt to taste
  • Black pepper to taste
  • 2 tbsp chopped green onions or chives (optional)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place English muffin halves on a baking sheet.
  3. Lightly toast muffins in the oven for 5 minutes.
  4. Meanwhile, melt butter in a skillet over medium heat.
  5. Crack eggs into skillet and cook until whites are just set.
  6. Season eggs with salt and pepper.
  7. Sprinkle cheese evenly over toasted muffin halves.
  8. Top with cooked sausage or bacon.
  9. Place one egg on each muffin half.
  10. Bake for 8–10 minutes until cheese is melted.
  11. Garnish with green onions and serve warm.
