Ingredients
- 12 oz elbow macaroni
- 2 tablespoons butter
- 2 large yellow onions, thinly sliced
- 1 teaspoon sugar
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 2 cups milk
- 1 cup vegetable broth
- 1 1/2 cups shredded Gruyère cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
Instructions
- Cook macaroni according to package instructions; drain and set aside.
- Melt butter in a large skillet over medium heat.
- Add sliced onions and sugar; cook slowly for 20–25 minutes until deeply caramelized.
- Stir in garlic and cook for 30 seconds.
- Sprinkle flour over onions and cook for 1 minute.
- Gradually whisk in milk and vegetable broth; simmer until thickened.
- Stir in salt, pepper, thyme, Gruyère, mozzarella, and Parmesan until melted.
- Add cooked macaroni and mix until evenly coated.
- Serve hot, optionally topped with extra cheese.

- Cook onions low and slow for best flavor.
