Description

Ingredients

  • 12 oz elbow macaroni
  • 2 tablespoons butter
  • 2 large yellow onions, thinly sliced
  • 1 teaspoon sugar
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup vegetable broth
  • 1 1/2 cups shredded Gruyère cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme


Instructions

  1. Cook macaroni according to package instructions; drain and set aside.
  2. Melt butter in a large skillet over medium heat.
  3. Add sliced onions and sugar; cook slowly for 20–25 minutes until deeply caramelized.
  4. Stir in garlic and cook for 30 seconds.
  5. Sprinkle flour over onions and cook for 1 minute.
  6. Gradually whisk in milk and vegetable broth; simmer until thickened.
  7. Stir in salt, pepper, thyme, Gruyère, mozzarella, and Parmesan until melted.
  8. Add cooked macaroni and mix until evenly coated.
  9. Serve hot, optionally topped with extra cheese.
