Garlic Butter Shrimp Scampi Lasagna is a rich and indulgent layered pasta dish featuring tender shrimp sautéed in garlic butter, creamy ricotta filling, mozzarella, and a light lemon-Parmesan sauce baked to bubbly perfection.
Ingredients
- 12 lasagna noodles
- 1 1/2 lbs large shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups ricotta cheese
- 1 large egg
- 1/2 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 2 tablespoons chopped fresh parsley
- 2 cups heavy cream
- 1 cup chicken broth
- 2 tablespoons all-purpose flour
Instructions
- Preheat oven to 375°F (190°C). Cook lasagna noodles according to package directions and set aside.
- In a large skillet, melt butter over medium heat. Add garlic and red pepper flakes; sauté until fragrant.
- Add shrimp, season with salt and pepper, and cook 2–3 minutes per side until pink. Stir in lemon juice and remove from heat.
- In a bowl, mix ricotta, egg, Parmesan, and parsley until combined.
- In a saucepan, whisk heavy cream, chicken broth, and flour over medium heat until slightly thickened to create a light cream sauce.
- Spread a thin layer of cream sauce on the bottom of a baking dish.
- Layer noodles, ricotta mixture, shrimp, mozzarella, and sauce. Repeat layers, ending with mozzarella and remaining sauce on top.
- Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10–15 minutes until golden and bubbly.
- Let rest 10 minutes before slicing and serving.
Notes
- Do not overcook shrimp before baking to keep them tender.
- Substitute half-and-half for a lighter sauce.
- Add spinach between layers for extra flavor and color.
- Allow lasagna to rest before cutting to help it set properly.
