Description

Garlic Butter Shrimp Scampi Lasagna is a rich and indulgent layered pasta dish featuring tender shrimp sautéed in garlic butter, creamy ricotta filling, mozzarella, and a light lemon-Parmesan sauce baked to bubbly perfection.


Ingredients

  • 12 lasagna noodles
  • 1 1/2 lbs large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups ricotta cheese
  • 1 large egg
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 2 tablespoons chopped fresh parsley
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 2 tablespoons all-purpose flour


Instructions

  1. Preheat oven to 375°F (190°C). Cook lasagna noodles according to package directions and set aside.
  2. In a large skillet, melt butter over medium heat. Add garlic and red pepper flakes; sauté until fragrant.
  3. Add shrimp, season with salt and pepper, and cook 2–3 minutes per side until pink. Stir in lemon juice and remove from heat.
  4. In a bowl, mix ricotta, egg, Parmesan, and parsley until combined.
  5. In a saucepan, whisk heavy cream, chicken broth, and flour over medium heat until slightly thickened to create a light cream sauce.
  6. Spread a thin layer of cream sauce on the bottom of a baking dish.
  7. Layer noodles, ricotta mixture, shrimp, mozzarella, and sauce. Repeat layers, ending with mozzarella and remaining sauce on top.
  8. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10–15 minutes until golden and bubbly.
  9. Let rest 10 minutes before slicing and serving.

Notes

  • Do not overcook shrimp before baking to keep them tender.
  • Substitute half-and-half for a lighter sauce.
  • Add spinach between layers for extra flavor and color.
  • Allow lasagna to rest before cutting to help it set properly.
