Ingredients

  • 2 steak cuts (ribeye or sirloin, about 2.5 cm thick)
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 4 cloves garlic, smashed or minced
  • 2 sprigs fresh thyme or rosemary
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Bring steak to room temperature for 20-30 minutes before cooking.
  2. Pat steak dry and season generously with salt and black pepper.
  3. Heat a heavy skillet over high heat until very hot.
  4. Add olive oil and place steak in the pan.
  5. Sear for 2-3 minutes on one side until a golden crust forms.
  6. Flip the steak and add butter, garlic, and herbs.
  7. Spoon melted garlic butter over the steak continuously for another 2-3 minutes.
  8. Cook to your preferred doneness.
  9. Remove steak and let it rest for 5 minutes.
  10. Slice and serve with the garlic butter from the pan.
