Description

Gordon Ramsay’s classic tiramisu is a luxurious Italian dessert made with espresso-soaked ladyfingers, rich mascarpone cream, and a dusting of cocoa.


Ingredients

  • 4 large egg yolks
  • 1/2 cup granulated sugar
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1 1/2 cups strong espresso, cooled
  • 2 tablespoons Marsala wine or dark rum
  • 24 ladyfinger biscuits (savoiardi)
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • Pinch of salt


Instructions

  1. Whisk egg yolks and sugar together in a heatproof bowl until pale.
  2. Place the bowl over a pot of gently simmering water and whisk continuously for 5–7 minutes until thickened.
  3. Remove from heat and allow to cool slightly.
  4. Fold mascarpone cheese and vanilla extract into the egg mixture until smooth.
  5. In a separate bowl, whip heavy cream with a pinch of salt until soft peaks form.
  6. Gently fold the whipped cream into the mascarpone mixture.
  7. Mix espresso with Marsala wine or rum in a shallow dish.
  8. Dip ladyfingers briefly into the coffee mixture and layer them in a serving dish.
  9. Spread half of the mascarpone cream over the ladyfingers.
  10. Repeat with another layer of soaked ladyfingers and remaining cream.
  11. Cover and refrigerate for at least 4 hours or overnight.
  12. Dust generously with cocoa powder before serving.

Notes

  • Do not oversoak the ladyfingers to avoid a soggy texture.
  • Chilling overnight enhances flavor and texture.
  • Use high-quality mascarpone for best results.
