Description

A moist and tropical Hawaiian pineapple cake made with crushed pineapple and topped with a rich cream cheese frosting.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 can (20 oz) crushed pineapple with juice
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar
  • 1/2 cup chopped walnuts or pecans (optional)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, whisk together flour, sugar, baking soda, and salt.
  3. Add eggs, crushed pineapple with juice, and vanilla extract; mix until well combined.
  4. Pour the batter into the prepared baking dish.
  5. Bake for 35–40 minutes, or until a toothpick inserted comes out clean.
  6. Allow the cake to cool completely.
  7. In a bowl, beat butter and cream cheese until smooth.
  8. Gradually add powdered sugar and beat until creamy.
  9. Spread frosting evenly over the cooled cake.
  10. Sprinkle with chopped nuts if desired before serving.

  • Do not drain the pineapple; the juice adds moisture.
