Description
A moist and tropical Hawaiian pineapple cake made with crushed pineapple and topped with a rich cream cheese frosting.
Ingredients
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1 can (20 oz) crushed pineapple with juice
- 1 teaspoon vanilla extract
- 1/2 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 2 cups powdered sugar
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large bowl, whisk together flour, sugar, baking soda, and salt.
- Add eggs, crushed pineapple with juice, and vanilla extract; mix until well combined.
- Pour the batter into the prepared baking dish.
- Bake for 35–40 minutes, or until a toothpick inserted comes out clean.
- Allow the cake to cool completely.
- In a bowl, beat butter and cream cheese until smooth.
- Gradually add powdered sugar and beat until creamy.
- Spread frosting evenly over the cooled cake.
- Sprinkle with chopped nuts if desired before serving.
Notes
- Do not drain the pineapple; the juice adds moisture.
- The cake tastes even better the next day.
- Store refrigerated due to cream cheese frosting.
