Description

A creamy, spicy chicken salad inspired by jalapeño poppers, made with tender chicken, crispy bacon, cheese, and fresh jalapeños—perfect for lunches or low-carb meals.


Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • 4 slices bacon, cooked and crumbled
  • 1/2 cup cream cheese, softened
  • 1/3 cup mayonnaise
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced fresh jalapeños (seeds removed for less heat)
  • 2 tablespoons chopped green onions
  • 1 tablespoon lime juice
  • Salt to taste
  • Black pepper to taste


Instructions

  1. In a large mixing bowl, add the softened cream cheese and mayonnaise, and mix until smooth.
  2. Stir in the lime juice, salt, and black pepper.
  3. Add the cooked chicken, shredded cheddar cheese, diced jalapeños, bacon, and green onions.
  4. Mix everything until well combined and evenly coated.
  5. Taste and adjust seasoning if needed.
  6. Chill in the refrigerator for at least 30 minutes before serving for best flavor.

Notes

  • Serve over lettuce, in a low-carb wrap, or with crackers.
  • For extra heat, leave some jalapeño seeds in.
  • Greek yogurt can replace part of the mayonnaise for a lighter version.
