Description
A creamy, spicy chicken salad inspired by jalapeño poppers, made with tender chicken, crispy bacon, cheese, and fresh jalapeños—perfect for lunches or low-carb meals.
Ingredients
- 2 cups cooked chicken breast, shredded or diced
- 4 slices bacon, cooked and crumbled
- 1/2 cup cream cheese, softened
- 1/3 cup mayonnaise
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced fresh jalapeños (seeds removed for less heat)
- 2 tablespoons chopped green onions
- 1 tablespoon lime juice
- Salt to taste
- Black pepper to taste
Instructions
- In a large mixing bowl, add the softened cream cheese and mayonnaise, and mix until smooth.
- Stir in the lime juice, salt, and black pepper.
- Add the cooked chicken, shredded cheddar cheese, diced jalapeños, bacon, and green onions.
- Mix everything until well combined and evenly coated.
- Taste and adjust seasoning if needed.
- Chill in the refrigerator for at least 30 minutes before serving for best flavor.
Notes
- Serve over lettuce, in a low-carb wrap, or with crackers.
- For extra heat, leave some jalapeño seeds in.
- Greek yogurt can replace part of the mayonnaise for a lighter version.
