Description
Tender and flavorful Greek-style lamb marinated in garlic, lemon, and herbs, then roasted or grilled to perfection. This dish is rich, aromatic, and perfect for a hearty Mediterranean meal.
Ingredients
- 2 lbs lamb shoulder or leg, cut into chunks or steaks
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 2 tbsp lemon juice
- 1 tbsp lemon zest
- 1 tbsp dried oregano
- 1 tsp fresh rosemary, chopped (or 1/2 tsp dried)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 cup plain yogurt (optional, for marinade)
Instructions
- In a bowl, mix olive oil, garlic, lemon juice, lemon zest, oregano, rosemary, salt, pepper, and paprika.
- Add yogurt if using and mix well to create a marinade.
- Coat the lamb thoroughly with the marinade, cover, and refrigerate for at least 2 hours or overnight.
- Preheat oven to 375°F (190°C) or prepare a grill over medium-high heat.
- Place lamb in a roasting pan or on the grill.
- Cook for 25–35 minutes (or longer depending on cut) until desired doneness is reached.
- Turn occasionally if grilling for even cooking.
- Let the lamb rest for 5–10 minutes before serving.
- Serve with vegetables, rice, or flatbread.

- Marinating overnight gives the best flavor.
- Yogurt helps tenderize the meat.
- Use a meat thermometer (145°F/63°C for medium).
- Pairs well with tzatziki sauce and a Greek salad.
