Description

Tender and flavorful Greek-style lamb marinated in garlic, lemon, and herbs, then roasted or grilled to perfection. This dish is rich, aromatic, and perfect for a hearty Mediterranean meal.


Ingredients

  • 2 lbs lamb shoulder or leg, cut into chunks or steaks
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 tbsp dried oregano
  • 1 tsp fresh rosemary, chopped (or 1/2 tsp dried)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 cup plain yogurt (optional, for marinade)


Instructions

  1. In a bowl, mix olive oil, garlic, lemon juice, lemon zest, oregano, rosemary, salt, pepper, and paprika.
  2. Add yogurt if using and mix well to create a marinade.
  3. Coat the lamb thoroughly with the marinade, cover, and refrigerate for at least 2 hours or overnight.
  4. Preheat oven to 375°F (190°C) or prepare a grill over medium-high heat.
  5. Place lamb in a roasting pan or on the grill.
  6. Cook for 25–35 minutes (or longer depending on cut) until desired doneness is reached.
  7. Turn occasionally if grilling for even cooking.
  8. Let the lamb rest for 5–10 minutes before serving.
  9. Serve with vegetables, rice, or flatbread.
