Description

Tender and juicy individual chicken meatloaves packed with garlic and Parmesan flavor, perfect for a keto-friendly, low-carb dinner.


Ingredients

  • 1 lb (450 g) ground chicken
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 3 cloves garlic, minced
  • 1/2 cup almond flour
  • 2 tbsp heavy cream
  • 1 tsp Italian seasoning
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp olive oil (for greasing)


Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking sheet or loaf pan.
  2. In a large bowl, combine ground chicken, Parmesan cheese, egg, garlic, almond flour, heavy cream, Italian seasoning, onion powder, salt, pepper, and parsley.
  3. Mix gently until just combined.
  4. Divide the mixture into equal portions and shape into small individual meatloaves.
  5. Place the meatloaves on the prepared baking sheet.
  6. Bake for 22–25 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Remove from the oven and rest for 5 minutes before serving.

Notes

  • Avoid overmixing to keep the meatloaves tender.
  • You can add shredded mozzarella for extra cheesiness.
  • Serve with steamed vegetables or cauliflower mash for a keto meal.
