Description

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for rolling)


Instructions

  1. Preheat the oven to 180°C (350°F) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In a separate bowl, cream butter and sugar until light and fluffy.
  4. Beat in egg, lemon zest, lemon juice, and vanilla extract.
  5. Gradually mix in the dry ingredients until a soft dough forms.
  6. Scoop tablespoon-sized portions of dough and roll into balls.
  7. Roll each ball in granulated sugar.
  8. Place on baking sheets, spacing cookies apart.
  9. Bake for 10–12 minutes until edges are set and tops are slightly cracked.
  10. Cool on baking sheet for 5 minutes, then transfer to a wire rack.

Notes

  • Do not overbake to keep cookies soft.
  • Chill dough for 30 minutes if cookies spread too much.
  • Store in an airtight container for up to 5 days.
