Ingredients
- 24 ladyfinger biscuits
- 1 cup fresh lemon juice
- 1 tbsp lemon zest
- 1/2 cup granulated sugar
- 1 cup heavy whipping cream
- 250 g mascarpone cheese
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup water (for lemon syrup)
- Extra lemon zest for garnish
Instructions
- In a saucepan, combine lemon juice, water, and granulated sugar. Heat gently until sugar dissolves. Let cool.
- In a bowl, whip heavy cream until soft peaks form.
- In another bowl, mix mascarpone, powdered sugar, vanilla extract, and lemon zest until smooth.
- Fold whipped cream gently into mascarpone mixture.
- Quickly dip each ladyfinger into the cooled lemon syrup.
- Arrange a layer of soaked ladyfingers in a serving dish.
- Spread half of the mascarpone cream over the layer.
- Repeat with another layer of dipped ladyfingers and remaining cream.
- Smooth the top and refrigerate for at least 4 hours or overnight.
- Garnish with lemon zest before serving.
Notes
- Do not oversoak ladyfingers to avoid sogginess.
- Chill overnight for best texture and flavor.
- Add a touch of limoncello to the syrup for an adult version.
