Description
A classic savory British pie filled with a creamy mixture of melted cheese and sweet onions, wrapped in crisp golden pastry.
Ingredients
- 2 sheets shortcrust pastry
- 2 tablespoons butter
- 2 large onions, thinly sliced
- 2 eggs
- 200 ml milk
- 200 g mature cheddar cheese, grated
- 1 tablespoon all-purpose flour
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat the oven to 190°C (375°F).
- Melt the butter in a pan over medium heat and gently cook the onions until soft and lightly golden. Set aside to cool.
- Roll out one sheet of pastry and line a 9-inch pie dish. Trim excess edges.
- Sprinkle the flour evenly over the pastry base.
- Spread the cooked onions evenly over the pastry.
- In a bowl, whisk together eggs and milk, then stir in the grated cheese.
- Season the mixture with salt and black pepper.
- Pour the cheese mixture over the onions.
- Cover with the second sheet of pastry, seal and crimp the edges, and make a small slit in the top.
- Bake for 40–45 minutes until the pastry is golden and the filling is set.
- Allow to cool slightly before slicing and serving.
Notes
- Serve warm or cold with salad or vegetables.
- Red Leicester or a mix of cheeses can be used instead of cheddar.
- The pie keeps well refrigerated for up to 2 days.
