Description

A classic savory British pie filled with a creamy mixture of melted cheese and sweet onions, wrapped in crisp golden pastry.


Ingredients

  • 2 sheets shortcrust pastry
  • 2 tablespoons butter
  • 2 large onions, thinly sliced
  • 2 eggs
  • 200 ml milk
  • 200 g mature cheddar cheese, grated
  • 1 tablespoon all-purpose flour
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Preheat the oven to 190°C (375°F).
  2. Melt the butter in a pan over medium heat and gently cook the onions until soft and lightly golden. Set aside to cool.
  3. Roll out one sheet of pastry and line a 9-inch pie dish. Trim excess edges.
  4. Sprinkle the flour evenly over the pastry base.
  5. Spread the cooked onions evenly over the pastry.
  6. In a bowl, whisk together eggs and milk, then stir in the grated cheese.
  7. Season the mixture with salt and black pepper.
  8. Pour the cheese mixture over the onions.
  9. Cover with the second sheet of pastry, seal and crimp the edges, and make a small slit in the top.
  10. Bake for 40–45 minutes until the pastry is golden and the filling is set.
  11. Allow to cool slightly before slicing and serving.

Notes

  • Serve warm or cold with salad or vegetables.
  • Red Leicester or a mix of cheeses can be used instead of cheddar.
  • The pie keeps well refrigerated for up to 2 days.
