Ingredients
- 2 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
- 1 cup cooked quinoa or rice
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup Kalamata olives, sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons hummus
- 1 tablespoon lemon juice
- Fresh parsley for garnish
Instructions
- Season the chicken breasts with olive oil, paprika, garlic powder, oregano, salt, and pepper.
- Heat a grill pan or skillet over medium heat and cook the chicken for 5–6 minutes per side until fully cooked.
- Remove the chicken from heat and let it rest for a few minutes, then slice.
- Prepare the base by dividing the cooked quinoa or rice between serving bowls.
- Arrange tomatoes, cucumber, red onion, olives, and feta over the grain base.
- Add sliced chicken on top.
- Drizzle with lemon juice and add a dollop of hummus.
- Garnish with fresh parsley and serve warm or chilled.

- You can substitute quinoa with brown rice or couscous.
