Description

Mini cheesecake tarts with a buttery crust and creamy cheesecake filling, perfect for parties and individual servings.


Ingredients

  • 1 cup graham cracker crumbs
  • 3 tbsp unsalted butter, melted
  • 2 tbsp sugar
  • 8 oz cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/4 cup sour cream
  • Fresh berries or fruit topping (optional)


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, melted butter, and sugar until combined.
  3. Press mixture into mini tart or muffin pan cavities to form crusts.
  4. Bake crusts for 5 minutes, then let cool slightly.
  5. In a bowl, beat cream cheese and sugar until smooth.
  6. Add egg and vanilla extract, mixing until just combined.
  7. Stir in sour cream gently.
  8. Spoon cheesecake filling over crusts.
  9. Bake for 12–15 minutes until centers are just set.
  10. Cool completely, then refrigerate for at least 1 hour.
  11. Top with fresh berries if desired before serving.

Notes

  • Do not overmix the filling to avoid cracks.
  • These tarts can be made a day ahead.
  • Use paper liners for easier removal.
