Ingredients
- 2 beef steaks (ribeye, sirloin, or filet mignon)
- Salt and freshly ground black pepper to taste
- 2 tablespoons olive oil
- 3 tablespoons butter
- 4 cloves garlic, smashed
- 2 sprigs fresh thyme or rosemary
Instructions
- Remove steaks from refrigerator 30 minutes before cooking to reach room temperature.
- Season generously with salt and pepper on both sides.
- Heat olive oil in a heavy skillet over high heat until very hot.
- Place steaks in the pan and sear for 2–3 minutes without moving.
- Flip steaks and cook another 2–3 minutes.
- Add butter, garlic, and herbs to the pan.
- Tilt the pan and spoon melted garlic butter over the steaks repeatedly for 1–2 minutes.
- Cook to desired doneness, then remove from pan.
- Let steaks rest for 5 minutes before serving.
