Description
Sweet and savory roasted carrots coated in nutty brown butter, honey, and garlic, then caramelized in the oven for a flavorful and tender side dish.
Ingredients
- 1 lb (450 g) carrots, peeled and cut into sticks or left whole if small
- 3 tbsp unsalted butter
- 2 tbsp honey
- 3 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1 tbsp fresh parsley, chopped (optional for garnish)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Place the butter in a small saucepan over medium heat. Cook while stirring until the butter foams and turns golden brown with a nutty aroma, about 3–4 minutes.
- Add the minced garlic and honey to the brown butter, stirring for about 30 seconds until fragrant. Remove from heat.
- Place the carrots on the prepared baking sheet and drizzle with olive oil, salt, and pepper. Toss to coat evenly.
- Pour the brown butter honey garlic mixture over the carrots and toss until well coated.
- Spread the carrots in a single layer and roast for 20–25 minutes, stirring once halfway through, until tender and caramelized.
- Remove from the oven, garnish with fresh parsley if desired, and serve warm.
Notes
- Use whole baby carrots for a prettier presentation.
- Do not burn the butter; remove it from heat as soon as it turns golden and smells nutty.
- For extra flavor, add a squeeze of fresh lemon juice before serving.
- A sprinkle of chili flakes can add a mild heat contrast to the sweetness.
