Description

Sweet and savory roasted carrots coated in nutty brown butter, honey, and garlic, then caramelized in the oven for a flavorful and tender side dish.


Ingredients

  • 1 lb (450 g) carrots, peeled and cut into sticks or left whole if small
  • 3 tbsp unsalted butter
  • 2 tbsp honey
  • 3 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1 tbsp fresh parsley, chopped (optional for garnish)


Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place the butter in a small saucepan over medium heat. Cook while stirring until the butter foams and turns golden brown with a nutty aroma, about 3–4 minutes.
  3. Add the minced garlic and honey to the brown butter, stirring for about 30 seconds until fragrant. Remove from heat.
  4. Place the carrots on the prepared baking sheet and drizzle with olive oil, salt, and pepper. Toss to coat evenly.
  5. Pour the brown butter honey garlic mixture over the carrots and toss until well coated.
  6. Spread the carrots in a single layer and roast for 20–25 minutes, stirring once halfway through, until tender and caramelized.
  7. Remove from the oven, garnish with fresh parsley if desired, and serve warm.

Notes

  • Use whole baby carrots for a prettier presentation.
  • Do not burn the butter; remove it from heat as soon as it turns golden and smells nutty.
  • For extra flavor, add a squeeze of fresh lemon juice before serving.
  • A sprinkle of chili flakes can add a mild heat contrast to the sweetness.
