Description

Tender slow-cooked beef simmered in a rich brown sugar and balsamic glaze, resulting in a sweet, tangy, and deeply flavorful main dish.


Ingredients

  • 2 lb beef chuck roast
  • 1/2 cup brown sugar, packed
  • 1/2 cup balsamic vinegar
  • 1 cup beef broth
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for thickening)


Instructions

  1. Place the beef chuck roast into the slow cooker.
  2. In a bowl, whisk together brown sugar, balsamic vinegar, beef broth, garlic, soy sauce, salt, pepper, and thyme.
  3. Pour the sauce mixture over the beef.
  4. Cover and cook on low for 8 hours or on high for 4–5 hours, until the meat is very tender.
  5. Remove the beef and shred or slice as desired.
  6. If a thicker sauce is desired, mix cornstarch with water and stir into the slow cooker; cook on high for 10–15 minutes until thickened.
  7. Return beef to the sauce and coat well before serving.
