Ingredients
- 2 lb beef chuck roast
- 1/2 cup brown sugar, packed
- 1/2 cup balsamic vinegar
- 1 cup beef broth
- 3 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 tablespoon cornstarch (optional, for thickening)
- 2 tablespoons water (optional, for thickening)
Instructions
- Place the beef chuck roast into the slow cooker.
- In a bowl, whisk together brown sugar, balsamic vinegar, beef broth, garlic, soy sauce, salt, pepper, and thyme.
- Pour the sauce mixture over the beef.
- Cover and cook on low for 8 hours or on high for 4–5 hours, until the meat is very tender.
- Remove the beef and shred or slice as desired.
- If a thicker sauce is desired, mix cornstarch with water and stir into the slow cooker; cook on high for 10–15 minutes until thickened.
- Return beef to the sauce and coat well before serving.
Notes
- This dish pairs well with mashed potatoes, rice, or roasted vegetables.
- Trim excess fat from the beef before cooking if desired.
- Sauce flavor deepens the longer it cooks.
