Description
Slow cooker crack chicken and rice is a creamy, comforting dish made with tender chicken, ranch seasoning, cheese, bacon, and fluffy rice, cooked effortlessly in the crockpot.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 cup uncooked long-grain white rice
- 2 cups chicken broth
- 1 packet ranch seasoning mix
- 8 oz cream cheese, cubed
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/2 tsp black pepper
- 2 tbsp chopped green onions (optional)
Instructions
- Lightly grease the slow cooker.
- Add chicken breasts to the bottom of the slow cooker.
- Sprinkle ranch seasoning and black pepper over the chicken.
- Add rice and pour in chicken broth.
- Top with cubed cream cheese.
- Cover and cook on low for 4–5 hours or high for 2–3 hours.
- Remove chicken, shred it with two forks, and return it to the slow cooker.
- Stir in shredded cheddar cheese and crumbled bacon.
- Cover and cook an additional 15–20 minutes until cheese is melted and rice is tender.
- Garnish with green onions and serve warm.
Notes
- Stir occasionally near the end to prevent sticking.
- Use rotisserie chicken to save time.
- Add steamed broccoli for a complete one-pot meal.
