Description

Slow cooker crack chicken and rice is a creamy, comforting dish made with tender chicken, ranch seasoning, cheese, bacon, and fluffy rice, cooked effortlessly in the crockpot.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup uncooked long-grain white rice
  • 2 cups chicken broth
  • 1 packet ranch seasoning mix
  • 8 oz cream cheese, cubed
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/2 tsp black pepper
  • 2 tbsp chopped green onions (optional)


Instructions

  1. Lightly grease the slow cooker.
  2. Add chicken breasts to the bottom of the slow cooker.
  3. Sprinkle ranch seasoning and black pepper over the chicken.
  4. Add rice and pour in chicken broth.
  5. Top with cubed cream cheese.
  6. Cover and cook on low for 4–5 hours or high for 2–3 hours.
  7. Remove chicken, shred it with two forks, and return it to the slow cooker.
  8. Stir in shredded cheddar cheese and crumbled bacon.
  9. Cover and cook an additional 15–20 minutes until cheese is melted and rice is tender.
  10. Garnish with green onions and serve warm.

Notes

  • Stir occasionally near the end to prevent sticking.
  • Use rotisserie chicken to save time.
  • Add steamed broccoli for a complete one-pot meal.
