Smothered Chicken Thighs are tender, juicy chicken thighs pan-seared and simmered in a rich, savory onion gravy, making a comforting and flavorful main dish.


Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 tablespoon butter
  • Fresh parsley for garnish (optional)


Instructions

  1. Season chicken thighs with salt, pepper, paprika, and garlic powder.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear chicken thighs skin-side down until golden brown, about 5–6 minutes per side. Remove and set aside.
  4. In the same skillet, add onions and cook until softened and caramelized.
  5. Add garlic and cook for 30 seconds until fragrant.
  6. Sprinkle flour over onions and stir well.
  7. Gradually whisk in chicken broth until smooth.
  8. Add thyme and butter, then return chicken to the skillet.
  9. Reduce heat, cover, and simmer for 30–35 minutes until chicken is cooked through and tender.
  10. Garnish with parsley and serve hot.

Notes

  • Boneless thighs can be used with reduced cooking time.
  • Serve over mashed potatoes, rice, or noodles.
