Smothered Chicken Thighs are tender, juicy chicken thighs pan-seared and simmered in a rich, savory onion gravy, making a comforting and flavorful main dish.
Ingredients
- 6 bone-in, skin-on chicken thighs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 2 tablespoons olive oil
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 2 cups chicken broth
- 1 teaspoon dried thyme
- 1 tablespoon butter
- Fresh parsley for garnish (optional)
Instructions
- Season chicken thighs with salt, pepper, paprika, and garlic powder.
- Heat olive oil in a large skillet over medium-high heat.
- Sear chicken thighs skin-side down until golden brown, about 5–6 minutes per side. Remove and set aside.
- In the same skillet, add onions and cook until softened and caramelized.
- Add garlic and cook for 30 seconds until fragrant.
- Sprinkle flour over onions and stir well.
- Gradually whisk in chicken broth until smooth.
- Add thyme and butter, then return chicken to the skillet.
- Reduce heat, cover, and simmer for 30–35 minutes until chicken is cooked through and tender.
- Garnish with parsley and serve hot.
Notes
- Boneless thighs can be used with reduced cooking time.
- Serve over mashed potatoes, rice, or noodles.
- Gravy thickens as it rests.
