Soft, delicate crepes filled with a sweet and creamy cheese filling, perfect for breakfast or dessert.
Ingredients
- 1 cup all-purpose flour
- 2 tbsp granulated sugar
- 1/4 tsp salt
- 2 large eggs
- 1 1/4 cups milk
- 2 tbsp melted butter
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 cup ricotta cheese
- Cooking spray or butter for pan
Instructions
- In a bowl, whisk flour, sugar, and salt.
- Add eggs, milk, melted butter, and vanilla; whisk until smooth.
- Heat a nonstick skillet over medium heat and lightly grease.
- Pour a small amount of batter into skillet and swirl to coat evenly.
- Cook for 1–2 minutes until edges lift, then flip and cook 30 seconds.
- Repeat with remaining batter; stack crepes.
- In a bowl, mix cream cheese, ricotta, and powdered sugar until smooth.
- Spread filling onto each crepe and roll or fold.
- Serve warm or chilled.
Notes
- Let batter rest 10 minutes for softer crepes.
- Dust with powdered sugar or drizzle with honey before serving.
