Description

Ingredients

  • 1 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 1/4 tsp salt
  • 2 large eggs
  • 1 1/4 cups milk
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 cup ricotta cheese
  • Cooking spray or butter for pan


Instructions

  1. In a bowl, whisk flour, sugar, and salt.
  2. Add eggs, milk, melted butter, and vanilla; whisk until smooth.
  3. Heat a nonstick skillet over medium heat and lightly grease.
  4. Pour a small amount of batter into skillet and swirl to coat evenly.
  5. Cook for 1–2 minutes until edges lift, then flip and cook 30 seconds.
  6. Repeat with remaining batter; stack crepes.
  7. In a bowl, mix cream cheese, ricotta, and powdered sugar until smooth.
  8. Spread filling onto each crepe and roll or fold.
  9. Serve warm or chilled.

Notes

  • Let batter rest 10 minutes for softer crepes.
  • Dust with powdered sugar or drizzle with honey before serving.
