Ingredients
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1 cup carrots, thinly sliced
- 1 cup zucchini, sliced
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon red pepper flakes (adjust to taste)
- Zest of 1 lemon
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup toasted breadcrumbs or crushed almonds (for crunch)
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add garlic and red pepper flakes; sauté for 30 seconds until fragrant.
- Add broccoli, cauliflower, and carrots; stir-fry for 4–5 minutes.
- Add zucchini and continue cooking for another 2–3 minutes until vegetables are tender-crisp.
- Season with salt and black pepper.
- Remove skillet from heat and stir in lemon zest and lemon juice.
- Sprinkle toasted breadcrumbs or crushed almonds over the vegetables.
- Toss gently to combine.
- Garnish with fresh parsley and serve immediately.
