Ingredients

  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup carrots, thinly sliced
  • 1 cup zucchini, sliced
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup toasted breadcrumbs or crushed almonds (for crunch)
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add garlic and red pepper flakes; sauté for 30 seconds until fragrant.
  3. Add broccoli, cauliflower, and carrots; stir-fry for 4–5 minutes.
  4. Add zucchini and continue cooking for another 2–3 minutes until vegetables are tender-crisp.
  5. Season with salt and black pepper.
  6. Remove skillet from heat and stir in lemon zest and lemon juice.
  7. Sprinkle toasted breadcrumbs or crushed almonds over the vegetables.
  8. Toss gently to combine.
  9. Garnish with fresh parsley and serve immediately.
