Ingredients
- 500g steak (sirloin or ribeye), cut into bite-sized cubes
- 2 cups cooked rice or quinoa
- 2 cups mixed vegetables (broccoli, carrots, green beans)
- 2 tbsp olive oil
- 3 tbsp butter
- 4 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp onion powder
- Salt and pepper to taste
- 1 tbsp chopped parsley (optional)
Instructions
- Season steak bites with salt, pepper, paprika, and onion powder.
- Heat olive oil in a large skillet over medium-high heat.
- Add steak bites in a single layer and sear for 2-3 minutes per side until browned and cooked to desired doneness. Remove and set aside.
- In the same skillet, melt butter and sauté garlic until fragrant.
- Return steak bites to the pan and toss to coat in garlic butter.
- Steam or sauté vegetables until tender-crisp.
- Divide cooked rice into meal prep containers.
- Add steak bites and vegetables to each container.
- Garnish with parsley if desired and let cool before sealing.
- Store in the refrigerator for up to 4 days.
Notes
- Do not overcrowd the pan to ensure a good sear.
- Use high heat for a caramelized crust on the steak.
- Swap rice with cauliflower rice for a low-carb option.
- Reheat gently to avoid overcooking the steak.
