Ingredients
- 3 medium zucchini, sliced into 1/4-inch coins
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp honey
- 2 tbsp fresh lemon juice
- 1/2 tsp lemon zest
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp chopped fresh parsley (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add zucchini coins in a single layer and cook for 3-4 minutes until golden on one side.
- Flip and cook another 2-3 minutes until tender.
- Reduce heat to medium and add minced garlic; sauté for 30 seconds until fragrant.
- Stir in honey, lemon juice, lemon zest, salt, and pepper.
- Cook for 1-2 minutes until glaze thickens and coats zucchini.
- Remove from heat and garnish with fresh parsley.
- Serve immediately.
