Ingredients

  • 3 medium zucchini, sliced into 1/4-inch coins
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp honey
  • 2 tbsp fresh lemon juice
  • 1/2 tsp lemon zest
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp chopped fresh parsley (optional)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add zucchini coins in a single layer and cook for 3-4 minutes until golden on one side.
  3. Flip and cook another 2-3 minutes until tender.
  4. Reduce heat to medium and add minced garlic; sauté for 30 seconds until fragrant.
  5. Stir in honey, lemon juice, lemon zest, salt, and pepper.
  6. Cook for 1-2 minutes until glaze thickens and coats zucchini.
  7. Remove from heat and garnish with fresh parsley.
  8. Serve immediately.
