Soft and chewy strawberry-flavored sugar cookies with a sweet fruity taste and a lightly crisp edge, perfect for a delightful treat.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberry puree or finely chopped strawberries
  • 1/2 teaspoon strawberry extract (optional)
  • Pink food coloring (optional)
  • Extra sugar for rolling


Instructions

  1. Preheat oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy.
  4. Add egg and vanilla extract, mixing well.
  5. Stir in strawberry puree and optional strawberry extract.
  6. Gradually add dry ingredients and mix until a soft dough forms.
  7. If desired, add a drop of pink food coloring and mix evenly.
  8. Scoop dough into balls and roll in sugar.
  9. Place on baking sheet and slightly flatten.
  10. Bake for 10–12 minutes until edges are set but centers remain soft.
  11. Cool on a rack before serving.

Notes

  • Do not overbake to keep cookies soft.
  • Chill dough for 20 minutes if too sticky.
  • Use freeze-dried strawberry powder for stronger flavor.
  • Store in an airtight container for up to 3 days.
