Ingredients
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup strawberry puree or finely chopped strawberries
- 1/2 teaspoon strawberry extract (optional)
- Pink food coloring (optional)
- Extra sugar for rolling
Instructions
- Preheat oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, cream butter and sugar until light and fluffy.
- Add egg and vanilla extract, mixing well.
- Stir in strawberry puree and optional strawberry extract.
- Gradually add dry ingredients and mix until a soft dough forms.
- If desired, add a drop of pink food coloring and mix evenly.
- Scoop dough into balls and roll in sugar.
- Place on baking sheet and slightly flatten.
- Bake for 10–12 minutes until edges are set but centers remain soft.
- Cool on a rack before serving.
Notes
- Do not overbake to keep cookies soft.
- Chill dough for 20 minutes if too sticky.
- Use freeze-dried strawberry powder for stronger flavor.
- Store in an airtight container for up to 3 days.
