Description

Crispy Taco Bell–style Fiesta Potatoes made with seasoned potatoes topped with warm nacho cheese sauce and creamy chipotle sauce, perfect as a side or snack.


Ingredients

  • 4 cups russet potatoes, peeled and diced
  • 2 tbsp vegetable oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup nacho cheese sauce
  • 1/4 cup chipotle sauce or spicy mayo
  • 2 tbsp chopped green onions (optional)


Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss diced potatoes with oil, paprika, garlic powder, onion powder, salt, and pepper.
  3. Spread potatoes evenly on a baking sheet.
  4. Bake for 30–35 minutes, flipping halfway, until golden and crispy.
  5. Heat nacho cheese sauce according to package directions.
  6. Transfer crispy potatoes to a serving dish.
  7. Drizzle with warm nacho cheese sauce.
  8. Top with chipotle sauce.
  9. Garnish with green onions if desired and serve immediately.

Notes

  • For extra crispiness, soak potatoes in cold water for 20 minutes and dry well before baking.
  • Can also be air-fried at 400°F for 18–20 minutes.
  • Add diced tomatoes or jalapeños for extra flavor.
