Description
Crispy Taco Bell–style Fiesta Potatoes made with seasoned potatoes topped with warm nacho cheese sauce and creamy chipotle sauce, perfect as a side or snack.
Ingredients
- 4 cups russet potatoes, peeled and diced
- 2 tbsp vegetable oil
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup nacho cheese sauce
- 1/4 cup chipotle sauce or spicy mayo
- 2 tbsp chopped green onions (optional)
Instructions
- Preheat oven to 425°F (220°C).
- Toss diced potatoes with oil, paprika, garlic powder, onion powder, salt, and pepper.
- Spread potatoes evenly on a baking sheet.
- Bake for 30–35 minutes, flipping halfway, until golden and crispy.
- Heat nacho cheese sauce according to package directions.
- Transfer crispy potatoes to a serving dish.
- Drizzle with warm nacho cheese sauce.
- Top with chipotle sauce.
- Garnish with green onions if desired and serve immediately.
Notes
- For extra crispiness, soak potatoes in cold water for 20 minutes and dry well before baking.
- Can also be air-fried at 400°F for 18–20 minutes.
- Add diced tomatoes or jalapeños for extra flavor.
