Description
A simple and flavorful tomato garlic pasta made with ripe tomatoes, fresh garlic, olive oil, and herbs tossed with perfectly cooked pasta. Light, fresh, and perfect for a quick weeknight meal.
Ingredients
- 12 oz spaghetti or penne pasta
- 3 tbsp olive oil
- 4 cloves garlic, thinly sliced
- 2 cups cherry tomatoes, halved (or 1 can diced tomatoes, drained)
- 1/4 tsp red pepper flakes (optional)
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper
- 1/4 cup reserved pasta water
- 1/4 cup fresh basil, chopped
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Bring a large pot of salted water to a boil and cook pasta according to package instructions until al dente. Reserve 1/4 cup pasta water, then drain.
- While pasta cooks, heat olive oil in a large skillet over medium heat.
- Add sliced garlic and sauté gently for 1–2 minutes until fragrant but not browned.
- Add tomatoes and red pepper flakes (if using). Cook for 5–7 minutes until tomatoes soften and release juices.
- Season with salt and black pepper.
- Add drained pasta to the skillet and toss to combine, adding reserved pasta water as needed to create a light sauce.
- Remove from heat and stir in fresh basil.
- Top with grated Parmesan if desired and serve immediately.
Notes
- Do not brown the garlic to avoid bitterness.
- Use high-quality olive oil for best flavor.
- Add cooked shrimp or grilled chicken for extra protein.
- Best served fresh and hot.
