Description

A simple and flavorful tomato garlic pasta made with ripe tomatoes, fresh garlic, olive oil, and herbs tossed with perfectly cooked pasta. Light, fresh, and perfect for a quick weeknight meal.


Ingredients

  • 12 oz spaghetti or penne pasta
  • 3 tbsp olive oil
  • 4 cloves garlic, thinly sliced
  • 2 cups cherry tomatoes, halved (or 1 can diced tomatoes, drained)
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1/4 cup reserved pasta water
  • 1/4 cup fresh basil, chopped
  • 1/4 cup grated Parmesan cheese (optional)


Instructions

  1. Bring a large pot of salted water to a boil and cook pasta according to package instructions until al dente. Reserve 1/4 cup pasta water, then drain.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Add sliced garlic and sauté gently for 1–2 minutes until fragrant but not browned.
  4. Add tomatoes and red pepper flakes (if using). Cook for 5–7 minutes until tomatoes soften and release juices.
  5. Season with salt and black pepper.
  6. Add drained pasta to the skillet and toss to combine, adding reserved pasta water as needed to create a light sauce.
  7. Remove from heat and stir in fresh basil.
  8. Top with grated Parmesan if desired and serve immediately.

Notes

  • Do not brown the garlic to avoid bitterness.
  • Use high-quality olive oil for best flavor.
  • Add cooked shrimp or grilled chicken for extra protein.
  • Best served fresh and hot.
