Ingredients
- 1 cup fresh raspberries
- 2 tablespoons granulated sugar
- 1 teaspoon lemon juice
- 8 oz semi-sweet chocolate, finely chopped
- 1 1/2 cups heavy whipping cream, divided
- 1 teaspoon vanilla extract
- 1 tablespoon powdered sugar
- 1 teaspoon unflavored gelatin
- 2 tablespoons cold water
- Fresh raspberries and chocolate shavings for garnish
Instructions
- In a small saucepan over medium heat, combine raspberries, granulated sugar, and lemon juice. Cook 3–4 minutes until berries break down. Strain to remove seeds and chill until slightly thickened.
- Spoon raspberry mixture into small silicone half-sphere molds (about 1 tablespoon each) and freeze until firm, about 1 hour.
- Bloom gelatin by sprinkling it over cold water; let sit 5 minutes.
- Heat 1/2 cup heavy cream until warm (not boiling). Stir in bloomed gelatin until dissolved.
- Pour warm cream over chopped chocolate. Let sit 1 minute, then stir until smooth. Add vanilla extract and cool slightly.
- Whip remaining 1 cup heavy cream with powdered sugar until soft peaks form.
- Gently fold whipped cream into cooled chocolate mixture until smooth and airy.
- Spoon mousse halfway into silicone dome molds. Insert frozen raspberry centers, then cover with more mousse. Smooth tops.
- Freeze for at least 4 hours or until firm.
- Unmold carefully and let sit 10–15 minutes before serving. Garnish with fresh raspberries and chocolate shavings.
