Ingredients
- 3 1/2 cups all-purpose flour
- 1 packet (2 1/4 tsp) active dry yeast
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 3/4 cup warm milk
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup raspberry preserves or jam
- 1 cup fresh raspberries
- 2 tablespoons lemon zest
- 2 tablespoons unsalted butter, softened
- 1 cup powdered sugar
- 2 tablespoons fresh lemon juice
- 1 tablespoon cream or milk
Instructions
- In a large bowl, combine warm milk, yeast, and sugar. Let sit for 5 minutes until foamy.
- Add melted butter, egg, vanilla extract, flour, and salt. Mix until a soft dough forms.
- Knead dough for 8-10 minutes until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
- Roll dough into a large rectangle on a lightly floured surface.
- Spread softened butter over the dough.
- Spread raspberry preserves evenly and sprinkle with fresh raspberries and lemon zest.
- Roll dough tightly into a log and slice into 12 rolls.
- Place rolls into a greased baking dish and cover. Let rise for 30 minutes.
- Preheat oven to 350°F (175°C).
- Bake rolls for 25-30 minutes until golden brown.
- Whisk together powdered sugar, lemon juice, and cream to make glaze.
- Drizzle glaze over warm rolls before serving.
