Cinnamon Sugar Donut Bread Loaf is a soft, buttery quick bread with the flavor of a classic cake donut, finished with a sweet cinnamon-sugar coating for a bakery-style treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup whole milk
  • 1/4 cup unsalted butter, melted (for topping)
  • 1/2 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. In a separate large bowl, cream softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix in vanilla extract.
  6. Add the dry ingredients alternately with milk, beginning and ending with the dry ingredients.
  7. Pour batter into the prepared loaf pan and smooth the top.
  8. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack.
  10. Brush the warm loaf with melted butter.
  11. Mix the remaining sugar and cinnamon together and generously coat the loaf on all sides.
  12. Let cool slightly before slicing and serving.

Notes

  • Coat the loaf while still warm so the cinnamon sugar adheres well.
  • Do not overmix the batter to keep the loaf tender.
