Description

A rich and creamy classic New York cheesecake with a buttery graham cracker crust, topped with a smooth chocolate ganache for an indulgent finish.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips


Instructions

  1. Preheat oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan.
  3. Bake crust for 10 minutes, then set aside.
  4. In a large bowl, beat cream cheese and sugar until smooth.
  5. Add eggs one at a time, mixing gently.
  6. Mix in sour cream, vanilla extract, and salt.
  7. Pour batter over the crust.
  8. Bake for 55–65 minutes until the center is slightly jiggly.
  9. Turn off oven and let cheesecake cool inside with the door slightly open.
  10. Refrigerate for at least 4 hours or overnight.
  11. Heat heavy cream and pour over chocolate chips. Stir until smooth to make ganache.
  12. Spread ganache over chilled cheesecake before serving.
