Description
A rich and creamy classic New York cheesecake with a buttery graham cracker crust, topped with a smooth chocolate ganache for an indulgent finish.
Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup heavy cream
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 325°F (160°C) and grease a 9-inch springform pan.
- Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan.
- Bake crust for 10 minutes, then set aside.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing gently.
- Mix in sour cream, vanilla extract, and salt.
- Pour batter over the crust.
- Bake for 55–65 minutes until the center is slightly jiggly.
- Turn off oven and let cheesecake cool inside with the door slightly open.
- Refrigerate for at least 4 hours or overnight.
- Heat heavy cream and pour over chocolate chips. Stir until smooth to make ganache.
- Spread ganache over chilled cheesecake before serving.
