Ingredients
- 500g ground chicken
- 1/4 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 1/2 cups mushrooms, sliced
- 1 small onion, finely chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated parmesan cheese
- 2 tablespoons fresh parsley, chopped
Instructions
- In a bowl, combine ground chicken, breadcrumbs, egg, garlic, salt, pepper, and Italian seasoning.
- Mix gently and form into small meatballs.
- Heat olive oil in a skillet over medium heat.
- Add meatballs and cook until browned on all sides and cooked through. Remove and set aside.
- In the same skillet, melt butter and sauté onion until softened.
- Add mushrooms and cook until tender and lightly browned.
- Pour in chicken broth and simmer for 2 minutes.
- Stir in heavy cream and parmesan cheese until smooth.
- Return meatballs to the skillet and coat in the creamy mushroom sauce.
- Simmer for 5 minutes until sauce thickens slightly.
- Garnish with fresh parsley and serve warm.
Notes
- Do not overmix the meatball mixture to keep them tender.
- Use freshly grated parmesan for best flavor.
- Add spinach for extra nutrition.
- Serve with pasta, rice, or mashed potatoes.
