Ingredients

  • 2 beef steaks (sirloin or ribeye)
  • 2 medium sweet potatoes, cubed
  • 3 tablespoons olive oil
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped


Instructions

  1. Preheat oven to 220°C (425°F).
  2. Toss sweet potato cubes with 2 tablespoons olive oil, paprika, salt, and pepper.
  3. Spread on a baking tray and roast for 25-30 minutes until tender and caramelized.
  4. Season steaks with salt, pepper, and thyme.
  5. Heat remaining olive oil in a skillet over high heat.
  6. Sear steaks for 3-4 minutes per side or until desired doneness.
  7. Reduce heat and add butter and garlic to the skillet.
  8. Spoon garlic butter over the steaks for 1-2 minutes.
  9. Let steaks rest for 5 minutes before slicing.
  10. Serve steak with roasted sweet potatoes and garnish with parsley.
