Ingredients
- 2 beef steaks (sirloin or ribeye)
- 2 medium sweet potatoes, cubed
- 3 tablespoons olive oil
- 3 tablespoons butter
- 4 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat oven to 220°C (425°F).
- Toss sweet potato cubes with 2 tablespoons olive oil, paprika, salt, and pepper.
- Spread on a baking tray and roast for 25-30 minutes until tender and caramelized.
- Season steaks with salt, pepper, and thyme.
- Heat remaining olive oil in a skillet over high heat.
- Sear steaks for 3-4 minutes per side or until desired doneness.
- Reduce heat and add butter and garlic to the skillet.
- Spoon garlic butter over the steaks for 1-2 minutes.
- Let steaks rest for 5 minutes before slicing.
- Serve steak with roasted sweet potatoes and garnish with parsley.
