Description

Rich and creamy custard bars infused with coconut flavor, topped with golden toasted coconut on a buttery crust for a delicious tropical dessert.


Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup coconut milk
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup shredded sweetened coconut
  • 1/2 teaspoon baking powder
  • 1/2 cup toasted coconut (for topping)


Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix flour and powdered sugar, then cut in butter until crumbly. Press into the bottom of the pan to form the crust.
  3. Bake crust for 12–15 minutes until lightly golden.
  4. In another bowl, whisk eggs and granulated sugar until smooth.
  5. Add coconut milk, vanilla extract, and salt, mixing well.
  6. Stir in shredded coconut and baking powder.
  7. Pour filling over the warm crust.
  8. Bake for 20–25 minutes until set in the center.
  9. Remove from oven and sprinkle toasted coconut on top.
  10. Let cool completely before slicing into bars.

Notes

  • Toast coconut in a dry pan or oven until golden for best flavor.
  • Chill before cutting for cleaner slices.
  • Store in refrigerator for up to 4 days.
  • Use full-fat coconut milk for richer texture.
  • Dust with powdered sugar before serving if desired.
