Description
Rich and creamy custard bars infused with coconut flavor, topped with golden toasted coconut on a buttery crust for a delicious tropical dessert.
Ingredients
- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, cold and cubed
- 2 large eggs
- 1 cup granulated sugar
- 1/2 cup coconut milk
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup shredded sweetened coconut
- 1/2 teaspoon baking powder
- 1/2 cup toasted coconut (for topping)
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix flour and powdered sugar, then cut in butter until crumbly. Press into the bottom of the pan to form the crust.
- Bake crust for 12–15 minutes until lightly golden.
- In another bowl, whisk eggs and granulated sugar until smooth.
- Add coconut milk, vanilla extract, and salt, mixing well.
- Stir in shredded coconut and baking powder.
- Pour filling over the warm crust.
- Bake for 20–25 minutes until set in the center.
- Remove from oven and sprinkle toasted coconut on top.
- Let cool completely before slicing into bars.
Notes
- Toast coconut in a dry pan or oven until golden for best flavor.
- Chill before cutting for cleaner slices.
- Store in refrigerator for up to 4 days.
- Use full-fat coconut milk for richer texture.
- Dust with powdered sugar before serving if desired.
