Ingredients

  • 250g high-protein pasta or whole wheat pasta
  • 2 chicken breasts, sliced
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup cottage cheese
  • 1/2 cup Greek yogurt
  • 1/2 cup grated parmesan cheese
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. Season chicken with salt, pepper, and Italian seasoning.
  3. Heat olive oil in a skillet over medium-high heat.
  4. Cook chicken until golden and fully cooked. Remove and set aside.
  5. In a blender, combine cottage cheese, Greek yogurt, milk, parmesan cheese, and garlic until smooth.
  6. Pour the sauce into the skillet and heat gently over low heat.
  7. Stir continuously until warm and creamy.
  8. Add cooked pasta and chicken to the sauce.
  9. Toss until evenly coated.
  10. Garnish with fresh parsley and extra parmesan before serving.
