Ingredients
- 250g high-protein pasta or whole wheat pasta
- 2 chicken breasts, sliced
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 cup cottage cheese
- 1/2 cup Greek yogurt
- 1/2 cup grated parmesan cheese
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 2 tablespoons fresh parsley, chopped
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- Season chicken with salt, pepper, and Italian seasoning.
- Heat olive oil in a skillet over medium-high heat.
- Cook chicken until golden and fully cooked. Remove and set aside.
- In a blender, combine cottage cheese, Greek yogurt, milk, parmesan cheese, and garlic until smooth.
- Pour the sauce into the skillet and heat gently over low heat.
- Stir continuously until warm and creamy.
- Add cooked pasta and chicken to the sauce.
- Toss until evenly coated.
- Garnish with fresh parsley and extra parmesan before serving.
